+1 on Contour....Only because It doesn't look as stupid as the GoPro on your head and is less likely to be taken off by a chair lift safety bar!

The three main Ski movies this year TGR, MSP & Poorboyz are all using different brand - VIO, GoPro, Contour.

I saw all three on the big screen last weekend, and the footage is amazing..... I dont think there'll be any worries with the quality of images produced by the cameras.... Only holdbacks are your creativity and your computer's processing power!

I assume the ski pole, because of the length, stops most of the vibration you get holding it in your hand, and that's why it's so smooth?

yeah exactly, the hold on that one was just taped on but i know a guy who spent some time and has a really good mount system on a ski pole, really secure.

and i guess thats why its smooth haha

I'm not sure what camera you have but I'd be worried about weatherproofing & cost of repair if damaged on an SLR/DSLR as well as the size and weight. A lot depends also on the type of photos you want to take.

You'll want a waterproof casing for your specific model, probably a large range telephoto lens to avoid changing on the hill (or just use 1 lens each day for specific types of shooting), a cleaning kit for on the hill, UV Filter, Pol filter, spare batteries and a waterproof and sturdy rucksack as well as a camera case.
If you're more serious about it maybe even a mini-tripod like the gorillapod SLR zoom, grey fade filter and solid grey filter if you're shooting into the sun for some situations.

If you're only going to do wider angle landscape stuff and not so much of the close up action it's maybe less riskier and safer (possibly cheaper too) to invest in a rugged, waterproof Canon D10 IS (35-105mm) or the wide Canon SD1300 IS (28-112mm). A compact camera won't get great results for fast moving snowboarders though.
