ITALY - best resorts for advanced??

Hey guys,
My dad and I are planning a ski trip in Italy (we're from Australia) and we literally have no idea.
Originally my dad wanted to ski Cervinia, then I read on the net that Cervinia has 'long, gentle slopes' and 'a severe lack of trees'. After reading that, we decided that we'd rather ski a more advanced mountain, also with some cover to stop wind hold on the lifts and also some trees to ski through would be fun

So can anyone help us out? We aren't limited to Italy, we'll probably visit neighbouring countries. Not sure how long we're going for, upwards of 2 weeks spread across a few resorts.

Does anyone know anything about the Dolomites? Good snow? Runs? Accommodation?
I imagine we'll be staying in mid-budget accommodation.

By the way my dad is a 60yo skiier, so when I say advanced, I mean black runs, I don't mean heli skiing etc.
