best situation i'd guess would be for your foot to be in the boot because then it gives the best represntation on the size of the boot and whether any parts of the strap or binding are going to pinch or be too loose
next thing to do is to pull at the straps etc to see if they slacken off or move, have a look at the build quality etc etc
main thing to do is be happy with them, the one thing you'll get with other brands is their 'convertible' toe strap can be used in the traditional position or over the toes like a cap strap and this offers more options for you |

not always, i could never get the wife's burton stilleto bindings set up properly (the capstrap was forever slipping up over the toe of the boots) with her burton casa boots (neither could the shop that we bought them for)
funnily enough they have subsequently been replaced by rome bindings
so it is worthwhile taking your boots even if the bindings are from the same brand though not what i did when i bought my ride spis off the web |

most boot and binding combo's work together, but to be safe take your boots with you when you go shopping for new kit..
it stands to reason Burton binders will be a good fit, but many other options are available, depending on your riding ability and pricepoint
