Also live view is good for static subjects, but has trouble focussing for action shots, particularly when the subject is rapidly approaching or leaving the camera.

Um, yes. Big ones. Here's a shot from a couple of seasons ago showing one way:
A lot of people who ride and shoot use a system like this. If you're shooting from a sled or otherwise have a fixed base (eg shooting a single hit or something) then a backpack's an alternative, but mostly they're too heavy and too slow for general use.
I also ride for shorter distances with the camera in my hand, although it's hard to shoot sensibly when you're actually moving.
I'm not sure what "live view" will do for you out in the mountains - it does tend to get fairly bright out there; it's handy to brace the camera against your face; and it's hard to hold a large SLR in extended arms for long. Still, perhaps that's just a question of what you're used to.

Anyone tried/do it??
I have a Nikon D300 although I'd buy a used D50 for the above.
The handy thing with the D300 is that it has Live View.
